"Pink Elephant Culinary Road Trip Part 6"
Today we are in France.
Bonjour mes Amis! This time on our long journey we stopped in Capbreton, France. Since we had a craving for local “soul food”, we conjured up a delicious pasta dish:
“Feels Like Home” Pasta Sauce!
Have fun cooking.
Recipe:
200 g sunflower seeds
1 root vegetable (e.g. leek, celery or a parsnip)
1 pepper
2 carrots
1 zucchini
3 tbsp olive oil
3 – 7 tomatoes
1 handful of parsley and other fresh herbs
1 tsp sweet paprika powder
1 teaspoon hot paprika powder
2 tbsp tomato paste
2 tsp oregano
250g spaghetti
- Chop up the sunflower seeds and toast them in a pan over low to medium heat.
- Slice the leek and peppers, grate the carrots and cut the zucchini into thin strips. Heat the olive oil in the pot and fry the grated vegetables. Cut the tomatoes into thin slices and add them to the pot with fresh herbs and spices. Then add the roasted sunflower seeds, paprika powder and a little water and simmer for a long time.
- Finally, cook the pasta, pour the sauce over it and the soul food is ready!
